Apple Coconut Bliss Balls

Try these bliss balls raw or baked! Delicious both ways. They are low in sugar, high in protein and fibre, and they are school friendly! A healthy alternative to granola bars!

Ingredients - Version 1

  • 2 cups shredded coconut, unsweetened

  • 1 cup rolled oats

  • 1 cup raw sunflower seeds

  • 1/2 dried apples (I use my own homemade dehydrated apple peels)

  • 6 or 7 pitted dates

  • 1/4 cup coconut oil

  • 1/4 cup honey

Ingredients - Version 2

Version 2 has a higher protein content, giving an ideal 2:1, carb to protein ratio.

  • 2 cups shredded coconut, unsweetened

  • 1/2 cup rolled oats

  • 1/2 hemp hearts

  • 1 cup raw sunflower seeds

  • 1/2 cup dried apples

  • 2 Tbsp chia seeds

  • 1/4 cup coconut oil

  • 1/4 cup honey

Directions

  • Blend coconut in food processor for 7 or 8 minutes, until it starts to become coconut butter, but isn’t quite there yet.

  • Add in the rest of the ingredients and blend until mixture is uniform.

  • Roll into balls, using approx. 1 Tbsp per ball.

  • Refrigerate overnight or bake at 350F for 12 minutes.
