High Fibre Seed Loaf

This recipe is inspired by mynewroots.org (Life Changing Loaf of Bread) and taken from That Clean Life. It is so great that I feel it is important for it to be included in the All You Need Is Health Kitchen collection.

I usually make it on a weekly basis, and keep it (pre-sliced) in the freezer. I’ve also mixed up all the dry ingredients together a few times to give as a gift, in case you feel inspired!

Makes 10 pieces

Oven: 350F

Ingredients:

  • 2 cups rolled oats

  • 1/2 cup whole flaxseed

  • 1/2 raw pumpkin seeds

  • 1/2 raw sunflower seeds

  • 1/4 cup chia seeds

  • 1/4 psyllium husk (I get mine at Bulk Barn)

  • 3 Tbps avocado oil, olive oil, melted coconut oil or melted ghee

  • 1/2 tsp salt

  • 1 1/2 cups water

Mix all your dry ingredients together in a bowl. Add in your oil and water. Mix well and pour into a lined loaf pan. I find parchment paper to be quite handy. Let rest for at least 2 hours, or overnight.

Preheat oven to 350F. Bake for 20 minutes, then remove from oven, take the loaf of of the pan and bake it again, directly on the rack for another 30 to 40 minutes.

Let it cool before slicing.

This ‘bread’ can be put in the toaster, and eaten with sweet or savoury topping!
